This ever-popular brunch dish is given a crunchy twist by topping with crunchy celery and salty feta.

You’ll need:
1 slice of sourdough bread, toasted
½ ripe avocado, mashed
Squeeze of lime
Salt and freshly ground black pepper
20g feta
1 stick of celery, sliced
2-3 mint leaves, torn
What to do:
Combine the mashed avocado and lime juice and season well. Spread on the toast.
Spread the celery slices over the avocado then sprinkle with the feta and torn mint leaves.
