What to do
- Wash the vegetables and dice them thinly
- Heat oil in a large pan, add the vegetables in stir around the pan to coat in the oil
- Cook the vegetables over a low heat, stirring frequently. Turn down the hear once fully cooked and the onion start to colour. This should take roughly 15-20 minutes
- note: ensure the carrot is tender
- Allow your mirepoix to cool and then use it as you wish.
- note: Mirepoix can also be frozen! Place it in a zip-lock bag, flatten it out and freeze it!

- 2 onions – diced
- 1 carrot – diced
