Radish, Celery and Tomato Salad with Chilli, Mint and Lime Dressing

This quick and easy salad is drizzled with a tangy, herby dressing. Full of crunchy, fresh ingredients, this vibrant number can be on the table in just 10 minutes! Serve as a sharing salad with grilled fish or halloumi.

What to do

  1. In a clean jam jar, shake together the sesame oil, lime juice, rice wine vinegar, chilli, and chopped mint, then season to taste. Set aside whilst you prepare the salad.
  2. Slice the tomatoes, celery and cucumber and combine with the radish bites. Pile onto a large plate then drizzle generously with the dressing.

What you will need

For the dressing:

  • 2 tbsp sesame oil
  • ½ tbsp lime juice
  • ½ tbsp rice wine vinegar
  • 1 chilli, chopped
  • 1 small bunch mint, chopped
  • Salt and freshly ground black pepper

For the salad:

  • 100g cherry tomatoes
  • 100g plum tomatoes
  • 4 sticks celery
  • ½ cucumber
  • 1 pack radish bites (or 120g radishes sliced)
