Roasted Celery and Blue Cheese
PREP TIME: 10 minutes
COOKING TIME: 30 minutes
SERVES: 6 as a side
What to do
- Preheat the oven to 220°C.
- Arrange the celery halves in a large baking tray – you may need to trim the tops to fit. Drizzle with the oil and 3 tbsp of the honey. Season with salt and pepper. Pour the cider into the tray and roast until the celery begins to brown, about 25-30 minutes.
- Meanwhile, in a small bowl mix together the blue cheese, walnuts, parsley, and remaining celery. Season with pepper.
- Spoon the cheese mixture over the cooked celery halves, drizzle with the remaining honey, and serve.

- 4 bunches of celery – 3 halved, 1 finely diced
- 2 tbsp extra virgin olive oil
- 5 tbsp honey
- Salt and pepper, to taste
- 500ml cider
- 150g blue cheese
- 25g walnuts
- Fresh parsley, chopped
