Fresh and full of flavour, this sweet and sour satay dip will not only give friends and family a taste of the Orient, but also provides a perfect contrast to the cool fresh crunch of the celery too.
What to do
- Put the coconut into a bowl, pour over hot water and leave to soak for 15 minutes.
- Strain the mixture into a saucepan, pressing well to extract all the liquid. Discard the coconut.
- Add the remaining ingredients and stir over a low heat until well blended.
What you will need
- 50g desiccated coconut
- 240ml hot water
- 5 tbsp crunchy peanut butter
- 1 tbsp light soy sauce
- 1 small clove garlic, crushed
- 1-2 fresh green chillies, seeded and finely chopped
- 1 tsp brown sugar
- 1 tbsp lime juice
- plenty of celery to serve
