The Best Celery Slaw Recipe
Serves 4-6 as a side
Ingredients
- 1 pack Celery – using the hearts, thinly sliced
- 50g radish
- 250g shredded red or green cabbage (or a mix)
- 1 medium carrot, grated
- 3 spring onions, thinly sliced
- 60g chopped fresh parsley
- 60g cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon honey (optional)
- Salt and freshly ground black pepper, to taste
Method
1. Make the dressing
In a large mixing bowl, whisk together the mayonnaise, apple cider vinegar, mustard, honey, salt, and pepper until smooth and creamy.
2. Prepare the vegetables
Thinly slice the celery Hearts on the diagonal. Add them to the bowl with the dressing, along with the shredded cabbage, grated carrot, spring onions, and chopped parsley.
3. Toss and chill
Mix well until all the vegetables are evenly coated in dressing. Taste and adjust seasoning. Chill in the fridge for at least 20 minutes before serving — this allows the flavours to develop and the slaw to stay crisp and cool.
